Banana Bread

Ingredients:

3/4 C. shortening
1 1/2 C. sugar
3 eggs
4 ripe or over-ripe bananas
1 1/2 tsp. salt
3 C. flour
3/4 C. nuts (optional)
1 1/2 tsp. baking soda
1 1/2 tsp. vanilla

Directions:

Cream shortening and sugar
Beat in eggs, one at a time, until fluffy
Add salt
Mash bananas and beat in with soda and vanilla
Mix nuts with flour and add to creamed mixture
Pour into two greased and floured loaf pans
Bake at 350 for 40-60 minutes
