Fresh Mushroom Spaghetti Sauce

Ingredients:

1/2 - 1 medium yellow onion
1/2 - 1 clove garlic minced
1/4 cup butter
1 tsp. salt
1/2 tsp. ground pepper
1 1/2 tsp. oregano

1 1/2 tsp. Italian seasoning
8 oz. fresh mushrooms
2 Tbsp water 
1 lb. 85 percent lean ground beef
1 32 oz. can tomato sauce
2 32 oz. cans of diced or crushed tomatoes
1 Tbsp parsley flakes (garnish)

Directions:

Combine seasonings (except parsley) with onion and butter
Saute on medium high heat until soft
Add mushrooms and water and cover until water evaporates
Add ground beef and continue to saute until meat is browned (set aside)
Meanwhile, combine tomato sauce and tomatoes and simmer until hot
Transfer the meat mixture, without the oil, to a large sauce pot
Combine meat mixture with tomato mixture and simmer until desired thickness
Garnish with parsley flakes and serve hot over pasta

Tip: If your spaghetti sauce turns out watery, it's because you need to simmer it longer.
